Blueberry Energy Balls Recipe

Ingredients:

  • 1 cup seedless dates

  • 1/2 cup oatmeal

  • 1/2 cup ground almonds or hazelnuts

  • 1/4 cup fresh blueberries

  • 2 tablespoons of chia seeds

  • 1 tablespoon honey or maple syrup (optional)

  • 1 teaspoon vanilla extract (optional)

  • pinch of salt

Instructions:

-Puree the dates in a blender or food processor.

-In a mixing bowl, combine date puree with oatmeal, ground almonds or hazelnuts, fresh blueberry, chia seeds, honey or maple syrup, vanilla extract, and salt.

-Mix all the ingredients well to obtain a homogeneous mixture.

-Create energy balls by breaking off walnut-sized pieces from the mixture you prepared and rolling them with your hands.

-Place the energy balls on a tray and let them rest in the refrigerator for about 1 hour. This will make the balls firmer and more consistent.

-You can then store the energy balls in an airtight container in the refrigerator.

-When you need it, you can increase your energy by snacking on these delicious date and blueberry energy balls!
